I'd love to be able to copy the response of a query within an app, the same way that's possible within workflows.

Hey @jonnilundy, thanks for the feature request. I've added an internal ticket tracking this, and I can update you here when there is any status change there.
One workaround in the interim is to pipe the query output to a component (ie: JSON editor) and copy the result from there.
