I know markdown isn't available in mobile. but is there any way to add color to certain text in for instance the list collection body? or any other method with different components?

If you use a custom collection you can add a text component which has its own text styling option, does that work?
When will it be possible to change other styling as well? Like background for example.
There isn't a particular timeline though it has been requested and we can follow up here. For the moment, you might try putting the text component inside of a container (which does support background styling):
