I would like to be able to remove default permission groups (and only use custom ones) how do I do that?

Unfortunately, this feature is not available for free users, custom permissions is only available to users with a business plan.
Also the default permission groups cannot be modified or removed. However, with the business plan you can remove users from the default groups and add them to only your custom groups.
It will be up to your organization's admin to create custom groups and add users to these groups for the permission rules to be applied. Multiple users can be added to a group at once!
