was back in 2023 ... 2 years later still no documentation for dynamic columns, do we have to guess how it works?

This is not. relevant documentation.
There is a click through tutorial, but it doesn't answer all of the questions I have (such as from your initial linked post):
The most pertinent info is what are all the format types:
There may be a list of these elsewhere or I may have to just inspect all of the different column type options manually.
Thanks for highlighting that gap in our documentation, @peter.b! The page that @pyrrho linked is currently the only official reference, as far as I know. I'll make a note of this internally and pass your feedback on to the Docs team. 
On a somewhat related note, one of our goals with this Community is to foster a living knowledge base and, to that end, we are definitely interested in creating documentation that can augment and complement the official documentation. If you think it would be useful, I can talk to the team about putting together an explanatory Tips & Tricks topic.
In the meantime, though, I'm happy to answer any questions you might have about configuring a table with dynamic columns!
