I created an integration with my Gsheet account, and it successfully connected. I built an app with it and everything works fine. However, when I try to use it in workflow, I get a weird error about authentication.
Does anyone know anything about this behavior?

Not sure I understand your question..
The integration is working fine in an app, but doesn't allow me to be used in workflows. I don't have other Gsheet integrations so can't know if it's this specific one or global issue.
Are you using an authentication method that requires any user interaction? Try enabling the Share credentials option from Resource settings:
