Using dynamic table with more then few columns imposes a different problem.
Text is cut off and you cannot see the full contents and there is no way to control the tooltip/hover for text.

I am surprised the column properties are not scrollable... are you using dynamic columns in this example?
Is controlling the tooltip/hover for text a request for the properties for column values?
They are not expandable, don't have tooltips or can be given hovers.
Also there is no control options Markdown/Text/Multiline Text.
I was trying to reproduce but it looks like I can drag the column width to expand for reducing cutoffs with dynamic columns turned on.
As well as using Table:Column:Appearance:Alignment to set them to spread out to the sides. On the bottom of this image.
Also I was able to add in to the tooltip/hover by clicking into the column as shown in the screenshot below
Do these features not work for you? Can you share more screenshots/screen recording on the column sizing and tooltip not working? What do you mean by control?

Overall normal columns you have a lot more ability to control colors, cell tooltips, captions vs dynamically generated columns.
